Flambé TENDERLOIN Amazing Grace Crepes

2 lbs Tenderloin of BEEF – trimmed and cleaned and cut into long thin strips (Season with a little salt and fresh ground pepper just before cooking)

8 -12 large sliced or quartered mushrooms

1/8 lb of blue cheese

Sauté beef in 2 T. butter in a hot pan, add blue cheese and flambé with 2 or 3 T. of brandy

One package of Knorr Swiss Demi-Glaze reconstitute according to directions on the package

Add

6 – 8 grape or cherry tomatoes cut into ¼’s

1 T. fresh chopped chives

 

Taste and correct salt and pepper

Fill crepes and enjoy.
