Fruit Oatmeal Cookies

These cookies are a great treat at any time but can be especially good to grab as you’re running out the door, full of mixed fruit and oatmeal they’re a good start to any day, or as an afternoon snack.

 

1 Cup Butter, softened

¾ C Packed Brown Sugar

½ C Cranulated Sugar

1 teaspoon Baking Powder

3 Eggs

1 teaspoon Vanilla

2 C Flour

2 C Oatmeal

7oz Mixed Dried Fruit Chopped (Any variation of this is good, apricots, apples, plums, pears)

Optional:

1 C Chopped nuts

1 C Chocolate Chips

Preheat Oven to 350 degrees F. In a mixing bowl (or food processor) cream the butter add the brown sugar, and granulated sugar until combined. Beat in the eggs and vanilla then gradually add the flour beating until it’s incorporated. Mix in the oatmeal a little at a time until fully mixed.

Add the dried fruit, chocolate/white chips and/or nuts and mix thoroughly.

Spoon using a teaspoon onto a cookie sheet and bake for about 10 -12 minutes or until lightly golden brown. Makes 2 - 3 dozen cookies, depending on size.

For a Christmas treat, dust the top with powdered sugar and red/green sprinkles.
