Jicama and Watermelon Salad - This is a very refreshing salad.

Ingredients:
1 teaspoon ground black pepper
Kosher salt
1 jicama, cut into matchstick pieces
4 cups watermelon in 2-inch chunks
1/3 cup feta cheese.
Mix all of the above ingredients in a large bowl and set aside.
Dressing:
1 cup fresh orange juice
2 tablespoons apple cider
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon cumin seed toasted then ground
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon fresh orange zest
1/2 teaspoon fresh lemon zest
1/2 teaspoon fresh lime zest
Mix all of the dressing ingredients together, pour onto watermelon and jicama, and gently stir to mix. Place gently onto a bed of lettuce, add extra dressing if necessary. For a little someth-en-someth-en add sunflower seeds and dried cranberries. Enjoy
