Snake River Farms Sirloin Steak                                              with  Olathe Colorado Sweet Corn                                                               (Corn Salsa)

At Kimball we have the opportunity to work with the best appliances in the world. We like to keep our purveyors at the same high standards.  That is why we were so excited to find Snake River Farms.  They are a Family owned company out of Boise Idaho that produces the best Kurobuta Pork and Waygu Beef that I have ever tried.

With this recipe we wanted to incorporate their outstanding Sirloin steaks.  We grilled them and then served them with a smoked corn salsa. We smoked the corn in our Electric Viking Smoker, that’s okay if you don’t have a smoker, you can grill the corn..

Ingredients

5-Sweet corn                                                           

2 Bags of round tortilla chips

3 Pablano peppers

3 Avocado  

1 red onion diced small

1 minced Jalapeño

1/2 bunch Cilantro Chopped finely

3 Limes- juiced

Ground Cumin

1 cup of The Best and Easiest BBQ Sauce, recipe follows

2 lbs of Snake River Farms Sirloin steaks seasoned and grill ready-

Step one-

Cook corn in a low temperature smoker for about an hour then cool in the refrigerator.

Roast the Pablano peppers on the grill or in the oven at 425 degrees until blacken on all 4 sides.  Cool, then deseed and peel the peppers, now chop into small dice size and refrigerate.

Combine Jalapeno, cilantro, onion, corn that has been removed from the cob, add the lime, season with salt, pepper and Cumin.

Step two

On a hot grill – cook steak to medium rare, let rest and then slice into thin slices.

Cut avocado at last minute and either toss into salsa or use as garnish

Assemble appetizer as follows-

Chip, steak, BBQ sauce, and salsa and serve immediately.

 

The Very Best and Easiest BBQ Sauce

This sauce is my favorite because it is easy to make, fast and it really tastes much better than any you can get at the store. We use it all the time here at Kimballl. It is so versatile, you can make many variations from the basic ketchup, brown sugar, and liquid smoke. Once you try this no other store bought BBQ sauce will ever compare.

1 cup of Ketchup

½ cup of Brown sugar

Liquid smoke to taste

1 medium onion diced yellow

1 jalapeño diced

1 TB Dijon Mustard

Sauté the onions, add the jalapeños, then add ketchup; sugar; mustard and liquid smoke and simmer for an hour.

The best thing about this BBQ sauce it is flexible,

-if you want a more sweet sauce then add more sugar or honey, if you want more savory add less sugar and more mustard.

-For a Mexican style, add red chile sauce and less Ketchup.

-If you are making your own smoked meats the use the drippings and don’t use the liquid smoke.
