Wilted Spinach Salad

16 oz mixed field greens and/or fresh baby spinach
1/2 red onion - diced
6 slices bacon - Cut into thin strips/julienne
8 oz raspberry vinegar or red wine vinegar
1/4 cup brown sugar
Croutons - to taste

To create dressing, saute' bacon until done. Add onions, saute' until tender, then add sugar and vinegar. Stir and simmer until incorporated. Wilt greens by tossing with hot dressing and add croutons to granish. Serve immediately.
